breakfast muffins

I know. I know.
The title says muffins and I have a picture of a cookie.
The recipe below is for the muffins that I
posted about on Monday.
You can also make these in cookie form.
I found this recipe in google images and did not save the info.
If you make these,
try and remember that they are HEALTHY for you.
They will probably taste a little different than what you are use to,
but they grow on you.
Breakfast Muffins/Cookies
3 mashed bananas
1/3 cup apple sauce
1/2 cup nuts
2 cups uncooked quick cooking oats
1/4 cup skim milk
1/2 cup dried fruit
1 tsp vanilla
1 tsp cinnamon
1 T brown sugar

Preheat oven to 350 degrees.
Mix all ingredients in a bowl really well.
Let this mixture stand for at least 5 minutes to let the oats become good and
hydrated. Heap the dough by teaspoonfuls onto a cookie sheet or
spoon the dough into a muffin pan.
Bake for 15-20 minutes and let cool.
I also make a peanut butter smoothie
that is delicious and HEALTHY for you.
In a blender,
add ice, skim milk, peanut butter, frozen banana (peeled) and a little splenda.
Mix well.
YUMMY!
You can also add some protein powder to this smoothie and it
will stay with you until lunch.
Happy Cooking,
Petie
